After last night’s fun event, today sure does seem mundane.

This morning we walked to school. The sunrise was gorgeous.


Just one more walk to school this year! Chewie will miss it. I’ll try to take him for some early morning walks this summer, once the novelty of sleeping past 6:00 a.m. wears off.

After I got home from walking the boys to school and ate breakfast, I biked to the gym.


I rode Star because I needed to take my yoga mats.


I may have embarrassed myself at Cycle Sports Concepts when I picked up Specialized Snowflake by asking whether people put racks and kick stands on racing bikes. Apparently not.


Oh, I got new yoga mats (above) finally! I got those at TJMaxx yesterday. I’m not crazy about the colors, but there was a very limited selection. At least they aren’t full of dirt and sand.

First up at the gym was 40 minutes on the elliptical.


Then Bodyflow.


At least the black mat won’t show grimy foot prints at the top and bottom like my other ones did eventually. Chad said these were Steeler’s colors. I was thinking Georgia Tech. Neither of which I care about at all.

After I biked home from the gym I started getting things prepped for dinner tonight, which is a remake of the Easy Crockin’ Enchiladas that I made a while ago. I had more than enough tortillas left over to make another batch, and the boys loved them, so I decided to make them again. Many of you said that you made them also and loved them, so I’m glad that I was able to share the recipe. One of the things I like about this recipe is that it seems so versatile.

This time I decided to use ground turkey instead of beef, and I forgot to buy zucchini to veg it up so I used what we had on hand. That was a bag of spinach (pictured with my phone so you can get an idea of how much I used…like 3/4 of a big bag)…


and a couple of handfuls of baby carrots that I roughly chopped.


I only used 1 1/4 pounds of ground turkey, so I also added about three cups of pinto beans that I had in my freezer (previously cooked from dried beans in the crock-pot and then frozen in one cup batches).


I chopped the raw spinach up a bit and after the carrots/onions/ground turkey were finished browning I threw the spinach in for a couple of minutes until it was wilted. Then I threw in the beans and mixed it all up then drained the whole mixture in a colander. I stuck the drained meat/bean/veg mixture in my fridge, along with the soups/salsa mixture in a separate bowl.

Then I ate my lunch and went to pick up the boys from school. After we got home and I made their snack, I layered everything in the crockpot and it’s good to go. The initial prep of the meat/veg takes a little effort (not much), but otherwise this recipe is so super simple.

Randomly, but sadly, I dropped one of my favorite coffee cups in the sink when I was washing dishes after cooking and the handle broke off.


I told you today was mundane. This cup was the perfect size, though. Not too big, not too small. Sadness.

While the enchiladas cooked away in the crockpot, I took the boys to karate and sat in the car writing most of this while they were there. After karate we went by Office Depot so that Cal could buy rubber bands and cheap pens and pencils.


Yesterday I bought him wooden clothes pins, popsicle sticks, and binder clips. These are the building blocks of miniature weapons of mass destruction. One of his buddies loaned him the book above about building the things (thanks Tanya) and he has already constructed quite an arsenal. I’ll have to get pictures of his creations.

Tonight is supposed to be my last Restore the Core class with Christie of Karna Fitness. Chad’s pool league has it’s tournament this weekend, so he has to go to a planning meeting regarding that tonight. So the boys will be coming with me to Restore, if it happens. Luckily, we meet and work out right next to a playground, so it ought to be fun for them. It’s only a half-hour anyway.

I’m not optimistic it’s going to happen, though. When we left Office Depot it was pouring down rain.


When we got home the house smelled great and we were all starving. We dove right into the crockpot enchiladas.


They were a hit again.


I used a medium-hot salsa so they were kind of spicy.


Now I’m listening to the rain and lamenting my exercise class most likely being canceled.

Oh, check out Trainer Chris’ blog post today about the training plan he has for me. He says I’m “naturally athletic.” I think that is hilarious. I need to chat with him a bit, but hopefully I’ll be starting this plan soon. I’d like to be able to go through the whole thing with him in person to make sure I’m doing everything correctly. With the kids out of school meeting up may be a logistical feat. Some of the things he describes he already showed me, so I may be able to start on my own. I am eager to get started!

Tomorrow is National Running Day, so I may attempt a one mile run. I also need to talk to Trainer Chris about integrating at least some amount of running into the plan over the summer. The official training plan for Ragnar Relay Florida Keys, which is 20 weeks long, will start in August, and I need to have at least a three or four mile base before starting that plan. Ahhhh. I hope it all works out!
