Whole30, Day 2

So far so good. I have had a very slight headache all day. Not debilitating or really painful, just kind of nagging. So far the thing I am missing the most is still the evil caffeine free Diet Cokes.

This morning Chewie and I walked Mack to school. It’s 2.3 miles round trip.

After I got home I made breakfast:

(2 eggs, hash including: onion, bell pepper, mushroom, sweet potato, homemade sausage, cashews, spinach, cooked in coconut oil)

After I ate breakfast, got Cal off to the bus stop, and did a few things around the house (Christmas decorations still up), I went to Mack’s school to hang out with him while he had lunch.

It was hot and humid today (high around 80°), so after a few minutes we moved into Mrs. P’s office to enjoy the air conditioning. And to visit Prince William.

Mack’s teacher didn’t have anything for me to do today, so after his lunch period I went home to have my lunch.

After lunch I ran a few errands including hitting up a third specialty grocery store in two days. Yesterday I ran by Rollin’ Oats and Fresh Market, which are both on my side of town. Today I checked out Earth Origins, which is NOT on my side of town but which I was able to combine with another errand in that area.

Earth Origins definitely had the best selection of oils of the three stores. I bought these Whole30 compliant delicacies:

(salmon, kimchi, sauerkraut, and sardines…yum!)

On the way home from Earth’s Origins I stopped by a different Publix and found some Whole30 compliant bacon!

Actually, it was probably available in the first place I looked, but I didn’t think to look at the “Lower Sodium” varieties of bacon. Once I looked at those, I realized that most of them have no added sugar.

I checked on all of the ingredients and they are Whole30 approved.

They do “recommend” not eating factory farm bacon, but as long as there is no sugar, it is Whole30 compliant. They say pork is the “dirtiest” of the factory farmed meat (worst conditions, most antibiotics, etc.). I plan to just use bacon as a condiment or flavoring, not as a main protein source.

I needed some bacon to make a recipe for dinner for. It was another one from Paleo Comfort Foods…Brussels sprouts slaw.

It called for 1/2 pound of bacon, but I only used 1/4 pound (four pieces). This recipe also has pecans and it was delicious. I left out the honey, which is listed as optional. The boys loved it. Chewie grabbed a rogue Brussels sprout that fell to the floor.

He quickly ate the whole thing. He eats first, asks questions later.

He must have liked it because he stared me down the rest of the time that I was making the slaw.

After dinner I went with the boys on the family evening walk.

Even though it may look bright in those photos, it was actually totally dark outside and they are lit only by the street lights. My camera is just amazing at finding and magnifying light. I realized when we were leaving that I was wearing all black, so I put on my Amphipod Xinglet that I got for Christmas.

As soon as we got home from walking I headed downtown for Restore the Core on the waterfront.

It was tough. I am so out of shape.

So that was it for Day 2. Other than a very slight headachy feeling, I felt fine all day. Even though I feel like I am eating large portions, I still felt very hungry before dinner and also felt hungry at bedtime. I guess my body is adjusting to not having all that easy-access energy from simple carbs. In It Starts with Food, they call it becoming “fat adapted”. They say that your body has to get used to using protein and fat again for energy.

The worst part of the day was in the evening after I got home from Restore. I felt hungry and wanted something. I could have just had a snack, but I’m trying to stick with the “three meals only” recommendation (not a rule). I may start making a cup of hot tea in the evenings. I’m still really missing sodas. That’s really my only craving still. Obviously I was very addicted to the wonderful terrible things.
