Whole 30, Day 15

Happy Martin Luther King Day! Happy Inauguration Day!

Before I do anything else I need to share some adorable pictures of my nephew Cody that my sister texted to me.

She has a small horse farm in South Carolina and Cody has been riding since he could sit up, but she just got a new saddle for him with a handle and now he can ride all by himself!

I miss him so much!

Have I mentioned that my sister is pregnant with a GIRL? She’s due in May. It will be the first granddaughter for my parents. She’s naming her Vivian after my mother! We are all beyond thrilled. Hopefully I’ll be visiting Cody and Vivi (that’s going to be her nickname) this summer. I can’t wait!

Now back to our regularly scheduled program.

Two weeks down and after today I am HALF WAY THROUGH my Whole30!

I slept in just a bit, then made breakfast for everybody. My breakfast:

(the last of the ground beef that was browned with mushrooms, onions, and eggplant to which I added some fresh spinach; two eggs with salsa, blueberries and strawberries)

After breakfast the boys and I headed out for a bike ride.

It was a gorgeous day, the perfect temperature for a bike ride. Not too hot, not too cold.

We followed the awesome bike paths all over northeast St. Pete and took a break at Coffee Pot Park so the boys could play on the playground for a few minutes.

Then we stopped by a nearby Publix to grab a couple of things…

then headed home via Coffee Pot Bayou.

It clouded up on us but we never got rained on. Apparently I make this face when concentrating on taking a photo and not running into the guardrail on a narrow path:

In all we biked over eleven miles! The boys did great. I love having kids old enough to do these types of things with me.

When we got home I made grilled cheese and soup for the boys, and a Whole30 salad for myself.

My salad included some leftover flank steak and pre-cooked steamed beets from Trader Joe’s. The only ingredient is beets.

I made a special snack for the boys to celebrate our long bike ride…Yonanas with Cool Whip!

Mack’s Yonanas was strawberries and blueberries and Cal’s was pineapple and coconut (with a little of Mack’s mixed in because I made Mack’s first so there was residual strawb/blube in the machine). I may have thrown a few chocolate chips in there also because I was feeling generous.

I also boiled some eggs to have for this week.

My new roses are so gorgeous. Not only are they an amazing color, but they are variegated!

They are really making me happy in the kitchen right now. My husband is the best.

For dinner the boys had leftover flank steak, but I made a quick chicken dish for myself.

I just sauteed some chicken with a little garlic, ginger, and coconut aminos. Then I added mushrooms and some leftover “not peanut sauce”. It turned out really delicious. That sauce is awesome. If you leave a comment requesting it, I’ll e-mail you the recipe for the “not peanut sauce”. I also made some more fauxtatoes (mashed cauliflower) and ate the broccoli stalks leftover from the broccoli the boys ate for their dinner. This was a really great meal.

Last night’s television included Girls and How I Met Your Mother.
