She is one of those people that make you feel cool by association when you hang out with them. I hate that there is a continent between us. She’s a Pacific Northwest girl. So far from Florida.

If you don’t know Peace, Love, & Low Carb then you are missing out on some delicious recipes. Kyndra is a master at recreating classic comfort food into healthy, low-carb versions that you can enjoy guilt-free. She just published her second cookbook, Slow Cooker Soups & Stews, in an ebook format and asked me if I’d be interested in test-driving it for my blog.


Since I am forever mining her website for recipes, drool over every post on her Facebook page, and LOVED her first cookbook, Peace, Love, and Low Carb – The Cookbook – 3 Ingredients to a Healthier You, I didn’t hesitate to say, “Yes!”

First of all, I love the foreword by D.J.Foodie who I met once at the Central Florida Blogger and Social Media Conference. He is hilarious. The book also includes a list with links to Kyndra’s favorite things (i.e. my Christmas list).

Since I plan to make every recipe in this book I decided just to start at the first one…

With a couple of hours of cooking time left I added a huge bunch of chopped collard greens to include some green veggies in our one-bowl meal.

This soup is sumptuous. The steak and mushrooms are amazing, but it’s the broth with it’s sour-creaminess that makes it so good. Chad was out of town last week, but the boys and I enjoyed this for two days, and I ate it for two meals the second day. With my NSNG lifestyle my “convenience foods” are mostly leftovers, so I was really happy that her recipes made PLENTY for at least two meals for the three of us, plus extra for me.

All my photos of this recipe are terrible because it was late at night when I took the photos and my kitchen felt like a cave. But all of Kyndra’s photos are vibrant and the recipes are beautifully staged. She is known for her amazing food photography. Please don’t judge mine.

I actually just ate the last bowl of leftovers of this soup while writing this post. Good to the last drop.

I know that I said I was going to work my way through the cookbook, but now I’m leaning towards making this one next, as Kyndra says it is one of her kids’ favorites:

Oh man. There are 30 recipes in this cookbook and each one looks better than the last.
