Whole30, Day 19

My stupidly hurt foot was pretty painful first thing this morning, but I decided to try to walk Mack to school anyway.

It was another foggy morning.

I had to walk a little awkwardly at first trying not to put too much pressure on the outside of the ball of my foot as I walked, but it loosened up during the walk and by the end was feeling much better. I think I just bruised it pretty badly.

When I got home I made breakfast. I read a recipe on one of the paleo sites a while ago about zucchini patties that sounded good so I decided to make some this morning. I just made up my own recipe based on several variations that I read.

That’s about half of a large zucchini, grated, one egg, 2 tablespoons of coconut flour, and seasoning to taste. I squeezed out a bunch of liquid from the zucchini with paper towels, then mixed all the ingredients together. The mixture easily formed patties.

I think I could have used less coconut flour in these patties just as with the salmon patties I made last week. Using that stuff is deceptive. The longer it sits the more liquid it absorbs. So it seems liquidy at first, but then seems like it’s too dry. I’ll get the hang of it eventually, probably at the end of my Whole30. Still, the patties were quite tasty, especially topped with Frank’s Red Hot.

I had one egg scrambled with some turkey kielbasa on the side along with some blueberries, strawberries, pomegranate arils, and pecans.

After breakfast I decided to head to the pool on my bike.

I thought it was going to be really chilly this morning, but it felt great in the sunshine. Don’t you just love jackets with thumb holes?

It was my usual route from my house to the downtown waterfront.

The pool is heated from November through March, so the water feels luxurious on slightly chilly days.

My swim was awesome. I did 2500 yards: 6X400 IM + 100 IM. That took me about an hour then I headed home. It was so warm by then that I didn’t even need a jacket.

In all I biked eight miles and swam 1.4 miles. I love that combination.

I was really glad when I got home that lunch was already prepared for me by Fitlife Foods.

and I added beets and Garlic Gold vinaigrette.

It was delicious. I hope that the dried cranberries did not have added sugar, and if sweetened that they were sweetened with fruit juice, but I’m not going to worry about it. The Fitlife employee told me that they did not have added sugar, so I have to trust that.

Soon after my lunch it was time to pick up Mack from school. He ended up going over to a friends house to play, so I had the afternoon to myself until it was time to pick up Cal. When we went to pick up Mack from his friend’s house they invited him to spend the night. So dinner was just for Cal and me.

I took the leftover crockpot pork medallions and onions and combined that with some butternut squash (I used a bag of frozen butternut squash…awesome) and some homemade red curry sauce. I made the red curry sauce with coconut milk, red curry paste, and coconut aminos all whisked together and heated up on the stove. I think it turned out really well. Cal had the curry pork over brown rice and I just had it with a ton of broccoli.

Cal was an only child for the evening and it seemed very quiet in the house with no constant arguing amongst brothers. After he went to bed Chad and I watched the season premiere of Spartacus! Yay!

This is the final season. It’s still kind of sad to watch it because of Andy Whitfield’s story, but Liam McIntrye has done a very good job replacing him.

Happy Martin Luther King Day! Happy Inauguration Day!

She has a small horse farm in South Carolina and Cody has been riding since he could sit up, but she just got a new saddle for him with a handle and now he can ride all by himself!

I miss him so much!

Have I mentioned that my sister is pregnant with a GIRL? She’s due in May. It will be the first granddaughter for my parents. She’s naming her Vivian after my mother! We are all beyond thrilled. Hopefully I’ll be visiting Cody and Vivi (that’s going to be her nickname) this summer. I can’t wait!

Now back to our regularly scheduled program.

Two weeks down and after today I am HALF WAY THROUGH my Whole30!

I slept in just a bit, then made breakfast for everybody. My breakfast:

After breakfast the boys and I headed out for a bike ride.

It was a gorgeous day, the perfect temperature for a bike ride. Not too hot, not too cold.

We followed the awesome bike paths all over northeast St. Pete and took a break at Coffee Pot Park so the boys could play on the playground for a few minutes.

Then we stopped by a nearby Publix to grab a couple of things…

It clouded up on us but we never got rained on. Apparently I make this face when concentrating on taking a photo and not running into the guardrail on a narrow path:

In all we biked over eleven miles! The boys did great. I love having kids old enough to do these types of things with me.

When we got home I made grilled cheese and soup for the boys, and a Whole30 salad for myself.

My salad included some leftover flank steak and pre-cooked steamed beets from Trader Joe’s. The only ingredient is beets.

I made a special snack for the boys to celebrate our long bike ride…Yonanas with Cool Whip!

Mack’s Yonanas was strawberries and blueberries and Cal’s was pineapple and coconut (with a little of Mack’s mixed in because I made Mack’s first so there was residual strawb/blube in the machine). I may have thrown a few chocolate chips in there also because I was feeling generous.

I also boiled some eggs to have for this week.

My new roses are so gorgeous. Not only are they an amazing color, but they are variegated!

They are really making me happy in the kitchen right now. My husband is the best.

For dinner the boys had leftover flank steak, but I made a quick chicken dish for myself.

I just sauteed some chicken with a little garlic, ginger, and coconut aminos. Then I added mushrooms and some leftover “not peanut sauce”. It turned out really delicious. That sauce is awesome. If you leave a comment requesting it, I’ll e-mail you the recipe for the “not peanut sauce”. I also made some more fauxtatoes (mashed cauliflower) and ate the broccoli stalks leftover from the broccoli the boys ate for their dinner. This was a really great meal.

Last night’s television included Girls and How I Met Your Mother.

That’s it for Day 15. Officially half-way done!
