Whole30, Day 28

February 4, 2013 at 3:04 pm

I meant to sleep in today (Sunday) since I got up at 4:15 a.m. on Saturday, but my body wouldn’t let me sleep past 6:30. I hate that.

I made Silk Almond Waffles for the boys…

and one of my typical Whole30 breakfasts for myself.

My Fascinating Life Caroline Calcote-3

The green stuff is bell pepper, mushrooms, onions, prosciutto, and beet greens. I love when you can get beets with the greens still attached. It’s like two for one.

I also roasted a sweet potato this morning and boiled some eggs, all of which were in preparation for the coming week. I didn’t take a photo of my roasted sweet potato, but this is what boiled eggs look like:

So, my hip feels good today! I’m a little sore and tired in all the muscles and joints in my legs and hips from my 8 miles yesterday. But my left hip (the good one) is actually more tight/sore than my right…this is AWESOME! To me that means that there is no unusual pain or soreness in my right hip. Any pain or soreness that I do feel is just normal tiredness/day after stuff. I am so happy!

After breakfast the boys and I loaded Chewie into the car, or rather Chewie joyfully bounded into the car, and we all headed to Largo.

My Fascinating Life Caroline Calcote-4

Chewie loves car rides.

I have no explanation for this:

We were headed to Largo Central Park.

My Fascinating Life Caroline Calcote-21

The boys played on the awesome playground…

My Fascinating Life Caroline Calcote-19

while Chewie and I walked laps around the park.

My Fascinating Life Caroline Calcote-10

I wore my Best Damn Race shirt. It was a gorgeous day.

We had to stop many times for mini train crossings.

My Fascinating Life Caroline Calcote-15

There was something in this monkey grass that Chewie desperately wanted to catch:

My Fascinating Life Caroline Calcote-14

He was not successful.

Every time I walked by the playground I checked on the boys. One time Mack yelled, “Mom, take my picture!”

My Fascinating Life Caroline Calcote-12

You don’t have to ask me twice.

My Fascinating Life Caroline Calcote-13

On one lap Cal walked with me to the car to get some water.

My Fascinating Life Caroline Calcote-17

He also helped me take a portrait of Chewie with the Police K-9 memorial statue:

In all, Chewie and I walked two miles…

My Fascinating Life Caroline Calcote-20

and the boys got some sunshine and exercise while playing on the playground.

Nice morning.

We headed home for lunch. Chad made soup for the boys, and I had leftover salmon patties on a salad.

My Fascinating Life Caroline Calcote-23

The white shredded stuff is sauerkraut. I also made some more of my semi-homemade creamy Italian salad dressing (homemade paleo mayo mixed with vinaigrette salad dressing). I’m kind of obsessed with it.

We hung around the house for a couple of hours until it was time to head to our friends’ house for the Superbowl.

Cal and Erin both got new glasses in the same week!

My Fascinating Life Caroline Calcote-26

It was hard to get that picture without a photo-bomber…

My Fascinating Life Caroline Calcote-27

Our friends (the other Caroline and her husband Lee) had a great spread of food laid out when we arrived.

My Fascinating Life Caroline Calcote-29

Chad did all of our Superbowl cooking this year, and he was awesome about making some Whole30 compliant options for me. He made two kinds of wings…

My Fascinating Life Caroline Calcote-30

In the foreground are wings with just salt (for me) and in the background are these awesome wings made with brown sugar and chili powder. Chad says this will be his go-to wing recipe from now on because they were awesome.

My Fascinating Life Caroline Calcote-34

Cal referred to them as “meat candy”.

Chad also made Whole30 compliant jambalaya (in honor of the Superbowl being in New Orleans) based on a recipe from Paleo Comfort Foods.

My Fascinating Life Caroline Calcote-31

It turned out really amazing. It had the perfect amount of spiciness.

My Fascinating Life Caroline Calcote-32

My Superbowl dinner:

My Fascinating Life Caroline Calcote-35

I went back for a second bowl of jambalaya later because it was so good.

My Fascinating Life Caroline Calcote-36

Chad made this for me even though he couldn’t even eat it due to all of the tomatoes. Thanks honey!

My Fascinating Life Caroline Calcote-37

The dads worked out a plan to get the kids into the game. They put all of the offensive players names (and also slips for defensive teams and special teams) into a hat and the kids drew out several names each until they were all gone.

My Fascinating Life Caroline Calcote-38

Each kid put in $5 and for the first six scores in the first half, whichever kid had the scoring players’ name would get $5. If there weren’t six scoring plays in the first half, then whichever kid had won last would get the rest of the pot. It did work to get the kids more excited about the game.

My Fascinating Life Caroline Calcote-44

We think it’s important to teach our children the joys of gambling.

My Fascinating Life Caroline Calcote-45

They were actually more excited when we announced that it was cookie time!

My Fascinating Life Caroline Calcote-40

We did have some quality football-watching togetherness, though.

My Fascinating Life Caroline Calcote-39

My Fascinating Life Caroline Calcote-41

Thanks to the C’s for having us over for the Superbowl!

My Fascinating Life Caroline Calcote-43

Love you guys!

We left at half-time to go home and get the boys to bed.

That’s it for Day 28. Two more days to go!!!!

Cya.

Whole30, Day 27

February 3, 2013 at 2:45 pm

This morning I hopped out of bed at 4:15 a.m. No really, I did. I have been feeling really amazing lately. Kind of euphoric. I’m afraid that I have become one of those Whole30 acolytes who believe it’s the best thing ever and will talk about it endlessly. Regardless, I had no problem getting out of bed when my alarm went off.

If you read my late-breaking post yesterday you know that I was on my way to the Best Damn Race.

My Fascinating Life Caroline Calcote-6

I packed a breakfast to eat in the car on the drive there.

My Fascinating Life Caroline Calcote-1

I smooshed the banana into the almond butter and ate it with a spoon.

The race was awesome. It was a totally fabulous morning.

My Fascinating Life Caroline Calcote-19

I ran/walked a gorgeous eight miles without hip pain and got to hang out with so many friends.

My Fascinating Life Caroline Calcote-43

When I got home from the race I iced my hip for thirty minutes then took an awesome hot shower. After being cold all morning then icing my hip I really needed to defrost.

Then I made lunch. I felt like I wanted something “special”, so I made salmon patties.

My Fascinating Life Caroline Calcote-2

Yes, salmon patties seem “special” to me now. I love them and they take a tiny bit of preparation and then you have a crunchy, fried crabcake-like protein for lunch.

My Fascinating Life Caroline Calcote-3

I finally got the coconut flour ratio perfect (only one heaping teaspoon) and the salmon patties came out beautifully.

My Fascinating Life Caroline Calcote-5

I topped them with a dollop of homemade paleo mayo and drizzled vinaigrette on top of the tomatoes, peppers, golden beets, lettuce, and spinach. This was truly a “special” lunch.

My Fascinating Life Caroline Calcote-4

I spent the afternoon writing blog posts and creating the Mom Power Team Facebook Page…please check it out!

Chad made grilled pork tenderloin for dinner.

My Fascinating Life Caroline Calcote-6

I made an awesome semi-homemade creamy Italian salad dressing by mixing a spoonful of homemade paleo mayo with a spoonful of Garlic Gold vinaigrette. It was delicious.

My legs and hips are tired and a little sore from my run, but none of that familiar hip pain I’ve had for the last year. Chad gave me a leg and foot rub while we watched The Dictator. Husband of the year.

That’s it for Day 27. Three more days to go! Cya.
